For the same reason emigrants to the U.S. Americanized their names!
OR:
Was he educated? Did he know how to spell his own surname?
You'll never really know, will you?
So where he was from it was pronunced and spelled - Miskinis, when he
moved west to Poland, his name was pronounced the same, but spelled
more in the Polish style.

My own German ancestors spelled their name with an "IC" at the end,
when they were in German towns, among other Germans (still in Poland),
they didn't change how they pronounced it, but the "IC" (Polish phonetic spelling)
became "ITZ" (German phonetic spelling) both pronouced identically
I have been told that my great grandfather was Lithuanian and had the last name Miskinis (spelling unknown). I was then rumored that he changed his name to the Polish name Myszkowski. The name was changed while in Europe. Why would this been done?
