Hi Jan,
I can tell you that the "...ek" ending is not one that I am used to seeing on German surnames. You do find it on Polish surnames. It will be present in surnames in other languages, as well. So, I cannot offer you the certainty that you are asking for.

If you are seeing a record with the name Kawollek, and trying to determine what Polish name that might represent, I will offer two options. Kawałek would be my first guess. Kowalek is also a possibility.

I see that Dave has answered your question about the Skotnik name. You can see the surname distribution for the Skotnik name by typing Skotnik into the "nazwisko" box and clicking on "zjadz."
