All links and books are in Polish, because James wrote that it doesn't matter for him. It also applies to other villages, which James asked about: Nieciecza and Konary:

In response to e-mail request from James, I put some links and bibliographical suggestions about Jasionka.

Here are some general informations from geographical dictionary:
http://dir.icm.edu.pl/Slownik_geograficzny/Tom_III/481

And a handful of publications not about Jasionka itself, but about Jasionka's vincinity. Especially about complicated ethnic relations in these areas:
Przemysław Dąbkowski, Stosunki narodowościowe ziemi sanockiej w XV stuleciu: Niemcy, Lwów 1921.

Władysław Sarna: Opis powiatu krośnieńskiego pod względem geograficzno-historycznym, Przemyśl 1898.

Wojciech Blajer, Uwagi o stanie badań nad enklawami średniowiecznego osadnictwa niemieckiego między Wisłoką i Sanem, (w Późne średniowiecze w Karpatach polskich (red. J. Gancarski), Krosno 2007

Adam Fastnacht, Osadnictwo ziemi sanockiej w latach 1340-1650, Wrocław 1962.

And here is site with bibliography:
http://www.beskid-dukielski.republika.pl/bibliografia.html
There are rather guidebooks, but for sure, you will find there something interesting.

It is always good to remember that St. John of Dukla frequented Jasionka, and the surrounded area is rich in the places of worship devoted to him. Inevitably, books about his life are also books about Dukla and the surrounding area. For example:
Józef Giergielewicz, Cudowna Miłość. Święty Jan z Dukli, Krosno 1997
