Post subject: Pierniki recipe
Would anyone please have an authentic recipe for pierniki ie. Polish spiced cookies?
I read that the very best pierniki are made in bakeries in Torun, Poland. Does someone have the same recipe or a similar one to the Torun pierniki ? _________________ The character from Downunder!

Here's what I found in "The Best of Polish Cooking" by Karen West:
1 cup honey
3 eggs
3 cups sifted flour
1 teaspoon baking soda
1/2 teaspoon nutmeg
1/2 teaspoon ginger
1/2 teaspoon cinnamon
2 egg whites
blanched almond halves
Combine honey and eggs thoroughly. Add flour, baking soda and spices and mix well. Press mixture into a ball and refrigerate for several hours until stiff. Roll out on floured surface to about 1/4-inch thick and cut with a floured glass or round cookie cutter. Lightly brush tops of cookies with egg whites and press a nut into each. Baked on greased cookie sheets at 350F for about 15 minutes.
I personally haven't tried this recipe but all the others from the book that I have tried have been excellent - highly recommended to add to your collection of cookbooks.
If you do try it I hope it comes out like you remember . . . .

Below you will find my mother's pierniki (gingerbread) recipe.
(they can be kept tightly closed up 2 months)
300 g (gram) of honey
400 g of icing sugar
4 eggs
1 kg (kilogram) of flour
1 bag of the gingerbread spices (if someone likes very aromatic gingerbread, you can use a bit more)
10 g of baking soda (2 full teaspoons)
160 g of butter
1 egg for spreading on biscuits
Honey, powdered sugar and eggs mix in a blender for about 15 minutes.
Mix the flour with the spice for gingerbread and baking soda and slowly pour honey into it.
When the dough gets hard stir it by hand.
Melt and cool butter and then add it to the dough. Knead the dough again.
Form the dough as a loaf, sprinkle lightly with flour, cover and carry away to cool place (or simply put in the fridge) - let it mature.
Roll out the dough in portion to a thickness of 1 cm, sprinkling flour underneath.
Cut out cookies using forms and lay them out on baking tray lined with baking paper.
Spread whisked egg on the cookies.
Insert it into oven heated to about 160 ° C for 10-15 minutes. Be careful not to burn.
Hot gingerbread take down from the hot baking sheet and arrange on a level surface.
Allow to cool.
Decorate with icing or chocolate.
