Bartczak, as Aga said, comes from the common name. It probably means they had a Bartłomiej as their ancestor and it sticked to them as a nickname and later a family name.
During my own research I've recently found that my very distant ancestors who were born at the beginning of the XIXth century had Bartczak as their family name. Their kids had in their documents a variation of that name - Bartkowiak and Bartkoski. It's interesting, because on a document from 1844 one daughter is written as "Jadwiga Batrkowska commonly known as Gurecka". The whole family (including her parents and brothers - including my direct ancestor) is called Gurecki after that.
