I know that many of my relative's have Niewirkow associated with them as the Parish. What exactly does that mean, ...they would have been RC. Is this the church, district, town etc?

Kryskenyon,

Niewirków is the village name. There were two places with such name in the old Poland.
one is in today's Poland, near Zamość, see the location: https://goo.gl/maps/NusPAMzVjUn, Roman Catholic parish was in Dub (and earlier in Gródek).

Second Niewirków is in today's Ukraine, in Volhynia, see the map: https://goo.gl/maps/fudUkwstQqx. There wasa parish church in the village.

As Aga wrote, there are several villages named Niewirków and there was a R.C. parish for most in Dub and for one in the place itself. Your relatives could have been either Roman Catholic or Orthodox. The attachment is from a work published circa 1930 and the far right column shows the location of the parish to which the village belonged. The entry "loco" means the parish was in the village itself and the abbreviation "r" stands for Roman Catholic and the abbreviation "p" stands for Orthodox. The village which had a R.C. parish in the place itself also was the seat of an Orthodox parish. The villages which belonged to the R.C. parish of Dub also belonged to the Orthodox parish in Cześniki.

Though it's been more than a year since the last post on this topic, I'm writing to add what I know. My maternal grandparents, Janina Bagińska, born in Medwedówka (now Ведмедівка, about 54 km east of Równe) in 1906, died in Windsor, Ontario in 1996, and Franciszek Polewski, born in Wiślica in 1896, died in Windsor in 1976, were married at Holy Trinity (Św. Trójcy) in Niewirków in October, 1926. This was the parish church for most of the villages west of Ludwipol and east of Tuczyń. The church is an abandoned ruin; during the communist collectivist period, the building was used for grain storage. Google will show you many photos of the church and there's a Polish Wikipedia page that you can read in English with Google Translate:
